BiwAMARETTO is made by extracting benzaldehyde, the aromatic component of loquat seeds, a specialty of Minami-Boso.

In Minami-Boso, there is an old custom of soaking loquat seeds in shochu and drinking it. We replaced it with our own rum (BOSO Rhum Fleur) and further flavored it with tonka bean, clove, plum, black tea, vanilla, etc., and sweetened it with honey and our own caramel to create our original bittersweet amaretto style The result is a bitter-sweet, original amaretto-like liqueur.

About Boshu Biwa, a loquat produced in Minami-Boso

Minami-Boso in Chiba Prefecture is one of the two major loquat production areas in Japan.
The loquat harvested here is called “Boshu loquat” and is characterized by its large, thick-walled, lush fruit.
The beauty of the shape of each individual loquat, its bright yellow-orange color, abundant juice, and elegant sweetness make it the “lady of fruits” that can only be enjoyed during the limited time in early summer, and it continues to be favored by lovers throughout Japan.
The production of Boshu loquat, which is said to have begun in 1751, has a history of more than 270 years, and is famous for being presented to the imperial family every year since 1909.

Although Minami-Boso is near the northern limit of loquat production, it was an advantageous location for transporting the fragile loquat to Tokyo, and so its cultivation flourished.
Biwa loquats are covered with bags during cultivation. This was done to protect them from damage from snow, wind, rain, strong sunlight, and insects. This was started in 1915 and has improved the quality of loquat even more.

The seeds from this loquat are also very large, shiny, and beautiful, and after a short time in the rum, they have a fresh, apricot-like flavor.

The Effect of Cyanide Compounds by Amygdalin

The seeds of loquat and other plants in the rose family contain a substance called “amygdalin,” which can cause poisoning symptoms if ingested in large quantities.
The Ministry of Agriculture, Forestry and Fisheries (MAFF) has issued a warning not to eat loquat seed powder, and has also issued a warning about recipes using loquat seeds.
The Ministry of Health, Labor and Welfare has also issued a notice to local governments stating that “If cyanide compounds (total cyanide) exceeding 10 ppm (10 micrograms/g) are detected in loquat seed powder, in principle, measures should be taken as falling under Article 6, Item 2 of the Food Sanitation Law (prohibition of sales of foods containing harmful substances). The same is true for BiwAMARET.
